Geoff's Beer Recipe

 

1 Case of Barbican, Holsten Pils or any other 'lager type' non-alcoholic beer
1 Case of Dark Moussy
2 Kgs Sugar
1 Teabag
Juice of 1 Lemon or lemon juice
1 Heaped Dessertspoon of dried yeast

Method:

Sterilize everything including your hands!!!

Put yeast in a glass with a little lukewarm sweet water and some sugar. Cover and allow to stand for 10 - 15 minutes

Put the remaining sugar into a large pan and add 3 litres of sweet water. Add one teabag and the juice of the lemon and heat, stirring occasionally until the sugar has all dissolved. Continue heating the mixture at simmer for 20 minutes to turn the into fructose. (Promotes a better head according to some). Discard the teabag.

Put 8 litres of cold sweet water into a 20 gallon dustbin. Add the sugar mixture. Add the non-alcoholic beer. Add extra sweet water if necessary to make up to 25 litres.

Check hat the mixture is not too hot and then add the yeast. Cover tightly and do not disturb for 10 days.

I said DO NOT DISTURB. That means DO NOT stir, DO NOT take the lid off to see how it's doing every other day. LEAVE IT ALONE.

Ignore this warning at your peril!! I guarantee you will ruin it if you do

After 10 days it will be ready to bottle. Thoroughly rinse out 30 x 900ml Rauch bottles with sweet water. Prime each bottle with a slightly rounded teaspoon of sugar. Siphon beer into bottles leaving a 2 inch space at the top.

Seal the bottles and rinse them. Then give them a good shake to dissolve the sugar. Allow the bottles to stand for a t least a week for secondary fermentation and conditioning to take place.
