Ingredients
1 pound of mince
1 tablespoon corn oil
1 medium onion - finely chopped
1 6oz tin of tomato paste
1 red chilli, 1 green chilli, 1 small hot green chilli all seeded and finely
chopped. - Make sure you wash your hands after this step!
2 cloves of garlic - crushed
1 teaspoon of oregano
½ teaspoon of corriander
½ teaspoon of ground cumin
½ teaspoon paprika
½ pound of dry kidney beans
¼ pint of stock
Optional
A few sliced mushrooms and or peppers
Method
Soak the kidney beans
overnight, then boil them for 2 - 3 hours, or
until soft, then drain them.
Finely chop the onions, then
lightly fry them in the corn oil for a few minutes. Add the mince and mix
well, frying on a high heat and breaking
the mince up until it is all broken
up into small pieces. Turn down the heat and add the crushed garlic, chillies
and all the rest of the ingredients and
stir well.
Simmer for 2 hours minimum.
However, the flavour is even better the following day.
