Serves 4
8oz White crabmeat, flaked
4oz Peeled prawns
2tsp Lemon Juice
1oz Butter
1oz Plain flour
10fl.oz Milk
2tbsp Marsala
1tbsp Chopped fresh parsley
1/2tsp Dijon mustard
2tbsp Double cream
Salt and freshly ground black pepper
4 Slices of crusty white bread
Parsley sprigs and lemon slices to serve.
Put crabmeat, prawns and lemon juice in a small bowl and mix lightly.
Melt the butter in a small saucepan. Stir in flour and cook, stirring for
one minute.
Remove from the heat then gradually whisk in the milk.
Return to heat and bring to the boil, stirring constantly.
Lower the heat and simmer for 5 minutes, stirring frequently.
Stir in the Marsala and mustard then remove from the heat and lightly fold
in the parsley, cream and crabmeat mixture.
Season with the salt and pepper.
Spoon over slices of hot toasted crusty bread and serve immediately
garnished with the parsley sprigs and lemon slices.
