Guacamole

 

The easiest way is to use a packet of EL RIO Guacamole Seasoning mix from the supermarket, instructions are on the back.

What I do is mash 2 ripe avocados in a mixing bowl with a potato masher. Put a dash of lemon or lime juice in to stop discoloration.

Add a medium chopped tomato, finely chopped red onion and anything else you wish to add. Sometimes I put finely chopped peppers.

Add the seasoning mix and leave to stand in the fridge for 30 minutes for the flavour to develop.

Now comes the best bit, taste to see if its hot enough, if not add either some finely chopped chilli or chilli powder and a crushed garlic clove(s) if you are a garlic fiend like me.

I then add some mayonnaise approx 2 tablespoons and taste again.

If you wish you could add some freshly chopped coriander.
