Serves 4
Ingredients:
3 Tbsp Vegetable oil
1 Onion, sliced
1 Tsp Ground cumin
1 Tsp Chilli powder
2 Tsp Ground coriander
1 Tsp Turmeric
8oz Potatoes, diced
6oz Cauliflower flowerets
4oz Green beans, sliced
6oz Carrots, diced
4 Tomatoes, skinned and chopped
10fl.oz hot vegetable stock
Onion rings to garnish
Heat oil in a large saucepan, add the onion and fry for 5 minutes until
softened.
Stir in cumin, chilli powder, coriander and turmeric and cook for 2
minutes, stirring occasionally.
Add potatoes, cauliflower, green beans and carrots tossing them in the
spices until coated.
Add tomatoes and stock and cover. Bring to the boil then reduce the heat
and simmer for 10 - 12 minutes or until the vegetables are just tender.
Serve hot, garnished with onion rings.
Variations
Feel free to use any mixture of vegetables to your taste to make a total
of 1.1/2lbs
