Tuna Pate

 

Serves 4 - 6

Ingredients:

1.1/2oz Butter
4 Spring onions, white part only, chopped
2 Sticks of celery
7oz can of Tuna in brine, drained
2 Tomatoes, skinned, seeded and chopped
2tbsp Mayonnaise
1tsp Lemon juice
1tsp White wine vinegar
Salt and freshly ground black pepper
Chopped fresh parsley and stoned green olives to garnish
Crusty bread or toast to serve

Method:

Melt the butter in a small frying pan.

Add spring onions and celery and cook gently for 5 minutes to soften. Leave to cool.

Put cooled spring onions mixtures into a food processor or blender with remaining ingredients and proves until fairly smooth.

Transfer to a serving dish, cover and put in the fridge for at least 30 minutes.

Garnish with the parsley and stoned green olives.

Serve with crusty bread or toast.
