Banoffi Trifles


6tbsp tropical fruit juice
2tbsp rum or brandy
2 firm bananas
8 thin slices of maderia cake
2tbsp belgian chocolate sauce

4 heaped tbsp Banoffee toffee or flavoured condensed milk
225g tub mascarpone
250ml/9fl oz chilled custard (from a tub or tin)
block of plain chocolate (any type or size)

In a large bowl stir the tropical fruit juice with the rum or brandy
Slice the bananas into the fruit juice mixtue and toss together
Sandwich the slices of maderia cake with the chocolate sauce and dice into squares
Pile into the bottom of four pretty glasses and top with banana and rum mixture then add a heaped spoonful of Banoffee toffee to make another layer
Next beat the mascarpone and the custard together until smooth then spoon on top of the mixture. Chill for up to 2 hours
Before serving shave the chocolate bar with a potato peeler over the top of the trifles
