Dark Christmas Cake with Marsala & Wine


Makes 2 18cm/7in round cakes

200g/8oz Unsalted butter
4 Large eggs
200g/8oz Dark muscovado sugar
250g/9oz Plain flour
50g/2oz Self-raising flour
140g/5oz Toasted hazelnuts or cob nuts, ground
200g/8oz Slivered almonds (for decoration)

For the Marinade

400ml/14fl oz full-bodied red wine
200ml/7fl oz Marsala
300g/10oz Currants
300g/10oz Raisins, preferably black muscatel
350g/12oz Sultanas
100g/ oz Dried figs, cut into thirds
140g/5oz Dried pears, peaches or apricots, cut into thirds
200g/8oz Luxury chopped glace fruits (can buy in tubs)
2tblsp Cocoa powder
2tsp Instant coffee granules or powder
Finely grated zest of lemon
1tsp Ground mixed spice
