Melt the butter and add the onion, cook for a minute or until it starts to soften. Add the rice, and cook for a few minutes more. Pour on the stock, and add the carrots. Cover, and cook for about 10 minutes. Add the cauliflower, and cook until it begins to soften. Add the mixed vegetables just a few minutes before serving. |
