Vegetable Pilau


60g/2oz/4tbsps butter or margarine
225g/8oz/1 cup long grain rice
1 onion, finely sliced
1 small piece of cinnamon stick
1 bay leaf
4 cardamom seeds, crushed
4 whole cloves
2.5ml/1/2 tsp ground coriander
1.25ml/1/4 tsp turmeric
1.25ml/1/4 tsp garam masala
salt & pepper to taste
170ml/1/2 pint/ 2 cups boiling vegetable stock
1 carrot, cut into small cubes
60g/2oz frozen cauliflower florets
120g/4oz mixed frozen vegetables

Melt the butter and add the onion, cook for a minute or until it starts to soften. Add the rice, and cook for a few minutes more.

Pour on the stock, and add the carrots. Cover, and cook for about 10 minutes.

Add the cauliflower, and cook until it begins to soften. Add the mixed vegetables just a few minutes before serving.
