Boiled Rice


1 cup of rice
1 tsp salt
1 tsp lemon juice (helps keep the rice white)
1 small knob of butter (helps stop the grains sticking together)
1 pint of boiling water per ounce of rice

Wash the rice thoroughly to remove excess starch, until the water remains clear.

Bring the water to a fast rolling boil. Add the salt, lemon juice and butter. Stir in the rice and continue stirring until the water is boiling again.

Cook for 12 minutes at high heat, then begin testing the rice. Once the rice is cooked, take it off the heat and pour in a cup of cold water to prevent further cooking otherwise it will turn to mush.

Pour through a colander to get rid of the water and then make some holes in the rice with the handle of a wooden spoon. Leave to stand for 10 to 15 minutes and then serve.
