SPINACH AND POTATO BHAJI


2Tbsp Butter or margarine
1tsp Chilli powder
1tsp Cumin seed
1tsp Ground coriander
1/4tsp Turmeric
1lb Potatoes, peeled and cut into chunks
8oz Fresh spinach, well washed and shredded
Salt
1tbsp Lemon juice

Heat the butter in a large casserole and add the spices

Cook for a few mins on a high heat

Add the potatoes and cook for 15mins stirring occasionally

Add the spinach during the last 5 mins of cooking

Add lemon juice and salt to taste

SERVES 6
