Mushrooms a la grecque


MARINADE

5tbsp olive oil
150ml/1/4pt dry white wine
1 clove of garlic
1 bay leaf crushed
1tbsp coriander seeds lightly crushed

SALAD

450g/1lb button mushrooms
225g/8oz fresh tomatoes peeled and chopped roughly
12 black olives stoned and chopped roughly

Put the oil, wine, garlic and crushed coriander seeds into a large saucepan
Cover and bring to the boil then simmer for 5 minutes
Add mushrooms, tomatoes and olives and stir well
Re-cover and simmer gently for 3 minutes stirring occasionally
Remove mushrooms to a serving bowl
Boil cooking liquid until reduced by half and then cool
Pour over the mushrooms
Chill for 2 horus before serving
