Heat oil in a large saucepan, add the onion and fry for 5 minutes until softened. Stir in cumin, chilli powder, coriander and turmeric and cook for 2 minutes, stirring occasionally. Add potatoes, cauliflower, green beans and carrots tossing them in the spices until coated. Add tomatoes and stock and cover. Bring to the boil then reduce the heat and simmer for 10 - 12 minutes or until the vegetables are just tender. Serve hot, garnished with onion rings. Variations Feel free to use any mixture of vegetables to your taste to make a total of 1.1/2lbs Serves 4 |
