4 red potatoes, cubed |
Wash lentils thoroughly and cook with 1 cup of water in a small saucepan over medium heat for 10 minutes. Meanwhile, in a large saucepan, heat oil. Add ginger and fry until crispy, then stir in potatoes, carrots and cauliflower. Cook uncovered for 5 minutes. Add red pepper, turmeric, lemon pepper and salt. Pour in lentils and cook covered over medium heat for 10 minutes. Sprinkle lemon juice and cilantro leaves on top for flavor and simmer 5 more minutes before removing from heat. |
