Remove the stems from the mushrooms and clean them thoroughly. Mix the vinegar, miso and soy sauce in a bowl with the mushrooms and marinate for an hour or so. Dice the mango, pepper and jalapeno, and toss with a little vinegar. Grill the mushrooms on both sides. When grilling the top, turn the mushroom 90 degrees halfway through to get a square or diamond crosshatch pattern. Serve on lettuce leaves on a plate, with a dollop of chutney on either side. |
