Lamb Dupiaza


450g/1 lb lean lamb fillet
45ml/3 tbsps oil
1 small onion, chopped
2 cloves garlic, crushed
2 small red chilies, seeded and chopped
5ml/1 tsp ground coriander
10ml/2tsp ground cumin
1 small piece ginger, grated
3 whole cloves
6 cardamom seeds, slightly crushed
juice of 1 lime
140ml stock
2 medium onions sliced in rings

Heat the oil for 30 seconds in a casserole, Add the onion, garlic and chilies and cook for a minute. Add the meat and cook for 5 minutes on high heat.

Add the stock and lime juice, and cover the pan.

Cook at medium heat for 20 minutes, stirring occasionally.

Add the onion rings during the last 10 minutes of cooking.

Garnish with chopped coriander and serve with pilau rice.
