Spinach & Potato Bhaji


450 g/1 lb potatoes, peeled and cut into chunks
225g/8 oz fresh spinach, well washed and shredded
30g/1 oz/2 tbsps butter
5ml/1 tsp chili powder
5ml/1 tsp ground cumin
5ml/1 tsp ground coriander
1.25ml/ΒΌ tsp turmeric
salt
15ml/1 tbsp lemon juice

Heat the butter in a large casserole and add the spices. Cook for a minute on high heat.

Add the potatoes and cook for 15 minutes at medium heat, stirring occasionally.

Add the spinach during the last 5 minutes of cooking, add the lemon juice and salt to taste.
