MEAT BHOONA


4 tbsps Oil
1 Onion, roughly chopped
3 Cloves of garlic, crushed
1 Small piece of ginger, grated
2 tsps Ground coriander
1 tsp Cumin
1/2 tsp Ground cloves
1/2 tsp Ground turmeric
1/2 tsp Cayenne pepper
1 tsp Chilli powder
6 Cardamons, slightly crushed
1 tsp Fenugreek seeds (optional)
1.5lbs Lamb fillet or rump steak, cut into 1 inch pieces
2 tsps Tomato puree/paste
Salt
1 Bay leaf
4 Fresh tomatoes, quartered

Heat the oil and add the onions and garlic cook on high for a minute then add the spices and stir

Add the meat and stir to coat. Cover and cook for about 5 mins stiring occasionally.

Add the rest of the ingredients except tomatoes and cook on a medium heat for 25/30 mins or until the meat is tender stiring occasionally

Add the tomatoes 5 mins before serving

SERVES 4 - 6
