LAMB DUPIAZA


3tbsp Oil
1 Small onion chopped
2 Cloves of garlic crushed
1 - 2 Red or green chillies chopped
1tsp Ground coriander
2tsp Ground cumin
1 piece of ginger grated
3 Whole clovees
6 Cardamoms, slightly crushed
1lb Lamb fillet
Juice of 1 lime or small lemon
140ml Stock
2 Medum onions sliced into rings

Heat the oil for 30 secs in a casserole

Add the onion, garlic and chillies and cook for a further min

Add meat and cook for 5 mins on high

Add stock and lime juice and cover the pan. Cook at medium heat for 20mins stirring occasionally

Add the onion rings during the last 10mins of cooking

Garnish with chopped coriander if desired and serve with pilao rice
