Nepali Vegetable Curry


6 Potatoes, unpeeled, scrubbed And diced
1 ts Ground coriander
1 ts Ground turmeric
1/2 ts Ground cumin
1/4 ts Dry mustard
1/2 ts cayenne
1 tsp Peanut oil
4 1/2 c Broccoli, cauliflower and/or Cabbage, chopped
Salt and pepper to taste
2 Tomatoes
1 tsp Curry powder

In a little peanut oil fry the spices.

Steam the vegetables until 3/4 done, then mix in the spices.

Add tomatoes, chopped, and curry powder.

Cover and simmer until all vegetables are tender.
