Red Thai Curry


2 tbsp Red Thai Curry Paste
2 Cans of Coconut Milk
2 tbsp Fish Sauce
4 Dried Lime Leaves
2 tbsp Sugar
3 tbsp Ground Unsalted Peanuts
2 or 3 Chicken Breasts finely sliced
3 tbsp chopped onion

In a wok put one can of coconut milk with the curry paste, fish sauce, lime leaves and sugar

Bring to the boil and allow to reduce by a third to a half

Add the remaining can of coconut milk, the ground peanuts, chicken and finally the onion

Simmer gently until the chicken is cooked through

Serve with Boiled Thai Jasmine Rice
