In a wok put one can of coconut milk with the curry paste, fish sauce, lime leaves and sugar Bring to the boil and allow to reduce by a third to a half Add the remaining can of coconut milk, the ground peanuts, chicken and finally the onion Simmer gently until the chicken is cooked through Serve with Boiled Thai Jasmine Rice |
