Black pudding fritters with spicy tomato sauce


2tbsp flour
salt and pepper
1/2 black pudding sliced into 1.5cm slices

FOR THE SAUCE

1/2 red onion peeled and finely sliced
1 garlic clove crushed
1tbsp olive oil
3 tomatoes chopped
a few sprigs of thyme
splash of white wine
pinch of chilli flakes

To make the sauce cook the onion and garlic in olive oil over a medium heat until the onions are soft
Add the chopped tomatoes and thyme and cook for five minutes lightly crushing the tomatoes with a fork
Pour in the wine and chilli flakes and cook until the liquid has reduced. Season with salt and pepper and keep warm
To cook the fritters heat a saucepan with oil for deep frying (CAUTION Hot oil can be very dangerous - do not leave unattended)
Season the flour with salt and pepper and toss in the black pudding slices
Deep fry the black pudding for 2 -3 minutes until golden brown. Drain on kitchen paper
Serve immediately with the spicy tomato sauce
