Chicken in Spicy Sauce


8 Chicken thighs or drumstick, skinned
8oz can of tomatoes, drained
6tsp Tomato puree
6tsp Chilli sauce
2stp Sugar
3tsp Garam Masala
6tsps light soy sauce
2inch piece Fresh root ginger, grated
2 Cloves of garlic
Juice of 1 lime and 1 lemon
Twist of lime and lemon to garnish

Wash the chicken and pat dry with kitchen roll. Slash meaty parts 2 or 3 times. Place in a shallow non-metal container. A Ziploc bag could also be used.

Put tomatoes, tomato puree, chilli sauce, sugar, garam masala, soy sauce, ginger, garlic and lime and lemon juices into a blender or food processor and blend until smooth.

Pour mixture over the chicken, cover and leave in a cool place for 2 - 3 hours to allow the chicken to absorb the flavours.

Preheat the oven to 190C 375F or Gas 5. Put the chicken and the sauce in a roasting tin and cook uncovered for 45 - 50 minutes, basting with the sauce 2 or 3 times until the chicken is cooked and tender.

Serve hot, garnished with lime and lemon twists.
