Kidney Casserole


5 OR 6 Pork Kidneys or you could use Lambs Kidneys but increase the amount
1 large onion, chopped
Lard or vegetable oil
1tblsp Paprika
1/2tsp salt
Black pepper to taste
2 Bay leaves
2 cloves of garlic, thinly sliced
Pinch of mace or nutmeg could be substituted
Tin of chopped tomatoes
2tblsp flour
2tblsp soft butter
Sour cream
Dumplings or mashed potato

Soak the kidneys in milk for an hour and then discard the milk
Dry kidneys and remove the membranes or tubes and as much fat as possible
Slice the kidneys or cut into chucks
Warm the lard or vegetable oil in a pan and cook onion until transparent
Add the kidney, garlic, paprika and salt
Cook for a few minutes to lightly brown the kidneys. Add bay leaves, mace or nutmeg and tinned tomatoes
Cook slowly for 30 mins until the meat is tender but not too soft
Mix flour with butter to make a roux, stir into stew and cook until thickened
Remove bay leaves
Adjust seasoning to taste

Serve with mashed potato or dumplings and sour cream
