Preheat the oven to 200C/400f/Gas 6 Grease a shallow ovenproof dish with butter. Place onion and black pudding slices into the base of the dish and place the potato slices overlapping on top. Pour over the stock and season with salt and freshly ground pepper. Sprinkle over the grated cheese Transfer to the overn and bake for 10 - 12 minutes or until the potatoes are tender and the top is golden brown. Serve warm in the dish Serves 1
