Baked Stuffed Mushroom with Blue cheese


12-16 large mushrooms
2-4 oz blue cheese
1/2 tsp garlic powder
10 oz frozen chopped spinach
2 tblsp butter
salt and pepper to taste

Thaw and squeeze the spinach dry, then chop finely.

Remove the mushroom stems and finely chop them.

Mix the chopped stems, blue cheese, garlic, spinach, and a little salt and pepper.

Melt the butter and coat the entire mushroom, inside and out.

Stuff the mushrooms with as much stuffing as can fit.

Bake at 350 degrees for 10 to 15 minutes, until golden brown.
