Crispy Sauteed Mushrooms


1 lb large mushrooms
olive oil
plain flour
unsalted butter

Slice mushrooms into 1/4" slices.

Lightly dampen the mushrooms with water.

Dust the mushrooms with the flour giving them a good coating.

In a large frying pan melt 1/2 stick of fresh unsalted butter with 1/4 cup of olive oil.

Mix the oils well and heat to about 300-325 degrees F.

Fry the mushrooms in the butter and oil mixture for 2 to 3 minutes.

Turn down the heat to saute level and continue to cook, turning frequently.

After a few minutes add salt and pepper to taste.

Continue to cook until the mushrooms are crispy.
