Piccatine Di Pollo Al'Limone


640g/8 chicken breasts
2tbsp lemon juice and zest
1tsp chopped garlic
2tsp chopped mixed fine herbs (parsley, rosemary, mint)
1tbsp chopped onion
400ml chicken stock
100g butter
2tbsp flour
20g parmesan cheese
Salt and pepper

FOR CIAO DELTA

1 medium eggplant, zucchini, potato, tomato, red pepper and onion
1tsp chopped garlic
1tsp rosemary
1tsp fresh basil
2tbsp olive oil
Sat and pepper to taste

Flatten the chicken breasts with a meat mallet then season with lemon juice, salt and pepper and coat lightly with the flour

Melt 2/3rd of the butter in a large shallow pan over medium heat and add the chicken and cook for 1 minute on each side. Transfer the chicken to a plate

Add remaining butter to the pan and cooke onion, garlic, rosemary, basil, parsley and mint for a minute. Add the stock, remaining lemon juice and cook chicken for 5 minutes. Transfer chicken to heated serving dish and pour over the sauce.

Sprinkle with some parmesan and lemon zest and serve with Ciao Della

CIAO DELLA

Put oil in a hot frying pan and saute gently all the vegetables and cook in oven for 10 minutes
