4 oz plain flour |
Sift the flour and salt into a bowl. Add the egg and some of the milk, a little at a time, mixing until smooth, eliminating any lumps, and stir in the remainder of the milk. Heat a little butter in an pancake pan. Pour in enough mixture to cover the bottom of the pan, and cook until it is beginning to brown on the bottom. Loosen the pancake by shaking the pan a little, then turn it over with a egg flipper. If you're feeling brave toss the pancake. Cook briefly on the other side. Place on a plate and sprinkle caster sugar and lemon juice to taste. The pancakes can be kept warm, covered with a towel, in a warm oven. |
