Stir fry the onion in a little oil, add the chillies and cabbage, and cook until soft. Remove from the heat. Beat the eggs then add the stirfried vegetables, and mix well. Heat a little oil in an omelette pan. Pour in the egg mixture and cook the omelette until golden brown on the underside. Serve with steamed or fried rice. Season to taste with salt and pepper. |
