Baked Ham


4lb Gammon
1 onion
1 carrot
1 stick of celery
Bouquet Garni
6 peppercorns

For Glaze:

4 tablespoons golden syrup
4oz brown sugar
1 teaspoon English mustard
White wine vinegar (to moisten)
12 cloves

Soak the joint for 4 hours in cold water to cover.

Throw away the water, cover the joint again with fresh cold water and bring to the boil and skim well.

Add the vegetables, bouquet garni and peppercorns. Cover and simmer gently for 2 hours.

Take the joint, remove rind and score the fat into diamonds with a sharp knife.

Heat the oven to 350F. Place joint in a baking tin and brush with warmed golden syrup.

Mix the brown sugar and dry mustard with enough vinegar to moisten and spread over the surface of the ham. Stick the cloves in the fat.

Bake in the oven for approximately 20 minutes or until golden brown.
