Pre-cook the bacon 2-3 minutes or until just soft but not browned; drain on paper towels. Cut Cheddar cheese into 12 slices long enough to fit inside the jalapeno halves. Wrap the jalapeno halves with the bacon slices, securing with a toothpick. Place on a medium baking sheet. Cover and keep chilled until just before serving. Preheat the grill. Grill 5 to 10 minutes, or until the bacon is evenly browned and cheese is melted. Serve hot. |
