Melt the butter in a small frying pan. Add spring onions and celery and cook gently for 5 minutes to soften. Leave to cool. Put cooled spring onions mixtures into a food processor or blender with remaining ingredients and proves until fairly smooth. Transfer to a serving dish, cover and put in the fridge for at least 30 minutes. Garnish with the parsley and stoned green olives. Serve with crusty bread or toast. Serves 4 - 6 |
