Fruity Lamb Tagine


2 tbsp olive oil
500g lean diced lamb
1 large onion
2 large carrots
2 garlic cloves
2 tbsp harissa spice mix
400g can chopped tomatoes
400g can chickpeas
200g dried apricots
600ml chicken stock

Put all the ingredients in a slow cooker and allow to cook overnight on medium heat.

Leave it to rest so it's not piping hot, then serve scattered with pomegranate and herbs, with couscous or rice alongside.
