60ml/4 tbsps oil
1 onion, sliced
2 cloves garlic, crushed
5ml/1 tsp ground cumin
10ml/2 tsp garam masala
10ml/2 tsp ground coriander
10ml/2 tsp paprika
5ml/1 tsp ground ginger
2.5ml/½ tsp cinnamon
450g/1 lb lean lamb fillet cut into 2.5cm/1 inch pieces
240ml/8 floz stock
2 bay leaves
30g/2 tbsps blanched split almonds
salt & pepper to taste

Heat the oil in a pan, add the onion and garlic and cook for a minute at high heat.

Add the spices and cook for another minute.

Add the meat and stir to coat. Cover loosely and cook for 5 minutes.

Add the stock, bay leaves and salt, cover and cook for 20 minutes or until the meat is tender, stirring occasionally.

Add the almonds during the last 5 minutes of cooking.

Garnish with bay leaves and serve.
