Combine soy sauce, cornflour and sherry and marinade the prawns for 30 mins Peel the mushrooms and cut into matchstick pieces Set wok to 420F/215C, heat the oil and stir fry the prawns for a few mins. Add the mushrooms and fry for a further minute Test for seasoning and serve |
