Salmon and Broccoli mornay


2.5lbs Salmon fillet
1/2lb Prawns
1 - 1.5lb /broccoli

SAUCE

Butter )
Flour ) to make 2 - 2.5pints
Milk )
1lb Emmentnal cheese
White wine )
English mustard) to taste
Salt & pepper )
Parmesan cheese

Blanch the broccoli and refresh under cold water
Lightly cook salmon in the microwave, leave to cool and then flake into large pieces
Put the salmon, prawns and broccoli into a large oven proof dish
Melt butter in a large pan and gradually and flour to make a roux. Slowly add milk until you obtain a sauce of medium thick consistancy
Pour the sauce over the fish mixture and sprinkle liberally with parmesan cheese
cook in oven at 180C for 20 minutes

Serves 6 - 8

Put together when all ingredients are completely cold
Sprinkle liberally with parmesan cheese
