Tzatziki


Most people who know me will know I love garlic and what better than this wonderful Greek dish.

1 large tub of greek yogurt or if not available plain yogurt
4 (or more!) cloves of garlic
2 3 tbsp Olive Oil
1 tbsp White vinegar
2 Cucumbers

Drain the yogurt. (Coffee filters are very handy)

Peel and seed the cucumbers. Grate them or mince in a food processor. Salt cucumbers and then drain and squeeze out excess liquid. Mix crushed garlic with oil and whisk until you have a thick paste and then add the vinegar. Add the yogurt and cucumber and if you wish some dried mint. Refrigerate for at least an hour to allow the flavours to mature.

You may need to give it a quick stir before serving.

Excellent with pitta or Arabic bread, slightly warmed.
